Despite the last two post revolving around food, I am not a food blogger. Heck, I wouldn't even label myself a real "cook." I am the master chef of mi casa, but that isn't saying too much. Really, just an everyday mom cook looking for easy and healthy recipes. We have gotten into this
bad habit of having a little treat after the girls' afternoon nap. It is that time of day that I crave just about anything doused in dark chocolate. So I have been having a wee bit of fun conjuring up healthy treat recipes.
Cookies earlier this week and fruit and cream ice cream today. It took five minutes to make, was packed with fruit, and
only took five minutes. Music to my mom 'o two ears.
Here's the recipe. Ready for this easy peasy-ness?
Blend two cups frozen fruit, 1/2 cup heavy cream, 2-4 tablespoons sugar, and 1 tsp vanilla for five minutes on high.
Sooo easy right? I used strawberries and peaches, but any fruit would work. I substituted whole milk instead of the heavy cream, but I think skim would work too. I split the difference and went with three tablespoons of sugar. It made four servings that I split and threw into the freezer for a few minutes before serving. Yum! And the best part, totally toddler approved.

Looks tasty! I can't wait for summer to get here and gobble up all sorts of yummy treats of the frozen variety. I just can't bring myself out from under all of the blankets right now to enjoy them :) You are braver than I :)
